0007318: [section 5.3.3.3] Testing not allowed values
Section 5.3.3.3 : I'm a bit lost there. My understanding of section
7.2 of ETSI 103 097-2 v1.2.1([...] All other HeaderField types defined
in clause 5 shall not be used [...]), states that the only header
fields to be used are signer-info, generation_time,
generation_location and its_aid. Then how come that some test can
accepts messages with header types such as
generation_time_with_standard_deviation or expiry_time ?

Each test has its purpose. We must check only fields which are correspondent to the test purpose and if it is correct, the test should be considered as passed even if some other fields are not allowed. Its will be checked elsewhere.
